What is Kobe Beef?

Kobe Beef is meat from the Tajima strain of Wagyu cattle, the cows are specifically raised in Hyogo prefecture. The rules for farming and raising the cattle are set by the Kobe Beef Marketing and Distribution Promotion Association. The meat is famous for the flavor, fattiness, and the well-marbled texture. Kobe Beef can be prepared as steak, sukiyaki, shabu shabu, sashimi, and teppanyaki.

Cattle were introduced to Japan in the second century and they were first used as work animals. The popularity of beef increased in the 1980s and the 1990s. In 1983, the Kobe Beef Marketing and Distribution Promotion Association was created to define and promote the Kobe trademark. They sets the standards for animals to be labeled as Kobe beef.

Kisshokichi serves affordable Kobe Beef. The meat served as steak is the main seller, but they also make items such as hamburgers, ramen, shabu shabu, and sukiyaki. The chefs cook the outside of the meat first, then put it in the oven to slowly cook the inside. This cooking process ensures that the meat will stay juicy. Some restaurants tend to buy parts of the cow, Kisshokichi buys the entire cow and that is why the price is lower compared to some other restaurants.

Steakhouse Kobe Oi has been serving Kobe Beef since 1871. The beef is served as steaks, shabu shabu, and sukiyaki. The menu changes weekly and there are only 20 to 40 servings each day.
